MIDDLE-EASTERN DESSERT Let's move to Lebanon today, Lebanese Nights, aka “Layali Lubnan” is an amazingly aromatic dessert that is quite refreshing in summer time.  It has a rich complex taste stemming from subtle hints of  Mastic (aka Mistika, or “Arabic Gum”, orange blossom water and rose water.  The bottom layer is made of the actual pudding, topped with a layer of whipped cream and a layer of coarsely ground fresh pistachios and sugar syrup.

Pudding Ingredients 
8 cups of whole milk
¾ cup of semolina
1 teaspoon of ground Mastika 
6 to 8 tablespoons of sugar
3 tablespoons of rose water
3 tablespoons of orange blossom water
1 cup of coarsely ground fresh pistachio

Sugar Syrup Ingredients
1 cup of brown or white sugar
¾ cup of water
¼ teaspoon of lemon juice
1 tablespoon of orange blossom water

Whipped Cream Ingredients
2 cups of Heavy Cream 
1 tablespoon of granulated sugar
Vanilla extract (optional)

- Mix milk, semolina and sugar well in a cooking pot then bring to a boil on medium to high heat while continuously stirring and scalping the bottom (this is important so the semolina doesn’t clump or stick).

- As soon as it boils, lower heat to minimum, add ground Mastika all while stirring.
When the pudding starts to thicken, remove from heat, add the rose water and orange blossom water, stir a bit so they are well dissipated and then immediately pour the hot pudding into your serving containers.

- The serving container could be a 2 inch-deep pyrex tray or small serving cups/bowls. Make sure to leave some room on the top for the whipped cream.

- Let rest and cool down at room temperature for about 40 minutes and meanwhile you can prepare the sugar syrup and the Whipped Cream.

- Mix water and sugar well then bring to a boil in a saucepan on medium heat.

- When boiling occurs, lower heat, add ¼ teaspoon of lemon juice and let it simmer for 10 minutes after which you remove from heat, add orange blossom water and let rest for 30 minutes at room temperature.

- Place Heavy Cream in a chilled stainless steal bowl (or place bowl on ice) and with a whisk whip your way through it for a few minutes vigorously.

- If you are using an electric whipper, start on low speed then increase the speed gradually.

- After a few minutes of whipping the Heavy Cream will increase in volume and turn into whipped cream as soft peaks start to form. At which point add the sugar and optional vanilla and whip a bit more to mix it in. Don’t over-whip the cream so it doesn’t turn into butter. Keep whipped cream chilled.

- Once the pudding has rested and cooled down place it in the fridge for a few minutes to chill, then top it with a ½ to ¾ inch layer of whipped cream, add a sprinkle of coarsely ground Pistachio and serve with sugar syrup (optional).

SMART PHONE! Finally, after 5 years of using Sony Ericsson p1i I managed to got a new mobile phone last Friday. After couple of months for researching, I decided to buy I-Phone 4s but unfortunately, I didn't find it in any near store, so I moved on the Korean industries which is is Samsung. I must say "Thank you" for my precious sister, you are my everything, I couldn't ask for more.

OLDIES GOLD When I was a child, I said: "NOWAY! I won't wear any accessories when I'm getting old" but now, I must admit that I can't go out without wearing any kind of accessories, it's really glams up your look, and give you feminine look! Today, I shared with you these photo for an old necklace I have (actually, it's for my sister but she gave it to me) so nearly it's age is more than 17 year. This necklace have so many small details that I really care about them when I buy any kind of accessories from the design, the shape, the little beads and so on that goes with black dress even for day work or for night. How about you?

NO CONNECTION! First, I want to apologize to my fans who are waiting my posts, I'm so sorry because I didn't do any posts the last week, I had some issues with the Internet connection and I couldn't do anything, I just had to wait until I get new connection! I must say "Thank you" to to give us a nice feature which is it "Schedule your post", I don't know what would happen to me if this weren't exist, so as you see the couple of posts I published them last week were scheduled, hope you liked them by the way!

Let me tell you something about me; I'm an Internet addicted, I know that all of us are addicted too, but I spent more than 11 hours out of 24 hours per day surfing the Internet, I know it's too much, but I have a lot of websites that I have to check them daily and to keep up date with my friends and so on. Actually, I found it difficult to cope with the situation that I have to live the next days without Internet! Can you imagine?!! I admit that life some times can be hard. But on the other hand, I saw the other side of life, I had some spare time so I enjoyed doing nothing :P

STAY HEALTHY As I'm writing this post, I wish this dish were by my side! Personally, I don't like Green vegetables (I know I'm weird) but this green dish I can resist! Such a healthy colorful dish that gives you the power to do your stuffs. It's super easy and fast to have this dish, what you have to do is mixing all the ingredients together: Lettuce, Parsley, Mint Lemon, Garlic, Onion, Vinegar and finally Olive Oil.

SPRING is probably my favorite season and I already started organizing my wardrobe to make sure I get more wear out of all my pretty pastel jumpers and accessories. As a typical girl, I still end up saying that "I have nothing to wear" though and my wishlist is never-ending :)

I picked a selection of items I have been eyeing up, with the embellished Chiara Ferragni loafer  being on the top of my list, I also need a nice Valentino pink purse. To go with the light/pastel theme, I will have to get myself a pair of  blue jeans. I also need a gold watch, Ray-Ban sunglasses and a new necklace to feed my addiction. I just can't stop buying new ones.

From beauty bits, I really want to finally get one of the Christian Dior nail polish Collection, but they always sell out really fast in-storeWhat's on your wishlist at the moment? Are you ready for Spring?
